Sugar Free Grain Free Raspberry Almond Scones would be a wonderful breakfast or tea time snack that any mom would love to enjoy on Mother's Day!

Breakfast in bed and a full day of pampering where the family waits on your every need is the ideal Mother's Day don't you think?

Most Mother's Day though that never quite happens. Not for me anyway. I always hope for a relaxing day but with the business of being a mom and having children who are involved in multiple activities, their needs come before my own.

Thankfully I don't envision this Mother's Day being spent at a soccer field as in some years past and I'm grateful as the weather in New England hasn't been very spring like in temperature.

What I do envision is a day starting off with these scrumptious raspberry almond scones with a raspberry cream cheese spread on top!

The way to this mom's heart is not store bought gifts, but instead homemade cards and healthy, sugar free, low carb but completely luscious food that won't make me feel the least bit of guilt indulging in.

While my oldest is almost 15 he is not into cooking or baking at all. My 12 year old daughter, now that is a different story. Just give her a recipe and away she goes in the kitchen, just like her momma. In fact we often come up with recipe ideas together and she helps me immensely in the kitchen.

She encourages me when a recipe has failed and gives me that push to try again.

And in fact I think my failures that happen in the kitchen help her to learn from them as well. She is a self taught seamstress. Yes she is only 12 and taught herself to not only sew with a real adult size sewing machine, but now makes American Girl doll clothes. She also taught herself to crochet and knit! This kids is amazing and she didn't learn any of that from me. I can't even sew a button, no lie.

But when she does fail during a sewing or other craft project I remind her of all the times I failed at recipes and that puts a big giant smile on her face.

She must certainly take after my grandmother. My grandmother was also a self taught seamstress, crocheter and talented cook and baker.Wonderful memories and certain recipes in the kitchen, especially around Mother's Day, remind me of my grandmother. Scones is one of them. Hence this recipe for Mother's Day I'm sharing with you. Grandma loved almonds, berries and all things involved with baking!

My daughter never really got to know her as she passed 10 days after my daughter turned 1, eleven years ago, but there isn't a day that goes by that I don't think about her since I see so much of my grandmother in my daughter. I cherish the time I had with my grandmother and the memories I'm making in the kitchen with my daughter and that to me is the best Mother's day gift ever.

My grandmother was an amazing Italian cook and baker. Although I have to recreate many of her recipes to make them gluten free, sugar free and low carb I think she would extremely proud of the recipes I've made that honor her legacy. Many of them are in my cookbook, Sugar Free Mom: Naturally Sweet and Sugar Free Recipes for the Whole Family. Yes I think she would be proud.

To fancy up the scones rather than use butter as a spread, I chose Horizon cream cheese. It's super creamy! You can find Horizon on FB and Twitter! When adding a bit of seedless raspberry jam to the cream cheese with a little bit of Silk unsweetened almond milk to make it smooth, it's simply heavenly with the scones!

Ingredients

Raspberry Cream Cheese Spread

  • 8 ounces Horizon cream cheese room temperature
  • 2 tablespoons raspberry jam I used Organic Farming Fiordifruta which is sweetened with fruit juice only
  • 1 tablespoon unsweetened Silk Almond Milk

Instructions

  • Preheat the oven to 375 degrees F.
  • Whisk the first 6 ingredients together.
  • Cut in the butter using 2 butter knifes or place in a food processor and pulse until combined.
  • In a stand mixer place the eggs, almond milk, extract, and liquid stevia.
  • Blend until combined.
  • Pour the dry ingredients into the stand mixer and blend on low until incorporated.
  • Gently stir in the slivered almonds and raspberries.
  • Place batter onto a parchment lined baking pan.
  • Make an 8 inch circle.
  • Using a greased pizza cutter or knife cut the circle into 8 triangles.
  • Using a greased spatula, separate the scones from each other and bake for 20 minutes.
  • Allow to cool 15 minutes before removing from pan.
  • To make the cream cheese spread, allow the cream cheese to get to room temperature fora 2-3 hours then add in the rest of the ingredients in a stand mixer.
  • Blend on high speed until completely smooth.
  • Taste and decide if you need to add any sweetener.
  • Enjoy a scone with 1 ounce of spread.
  • Keep spread refrigerated.

I don't know about you but in the summer and warmer months I'm all about no baking recipes! I am a sucker for creamy, smooth in texture desserts that require little effort and time in the kitchen but are elegant enough to serve to company!

If you're unfamiliar with what a Raspberry Fool dessert might be, here's the low down on this funny named dessert.

According to Wikipedia, a Fool, is an English dessert, but no one knows why exactly the term Fool came to be known for it. Either way it's a crushed fruit mixed with a sweet cream or custard.

  • Place 12 ounces of raspberries in a bowl with the lemon juice and SweetLeaf® Liquid Stevia Berry Sweet Drops™. Mix well until thoroughly coated. Let the berries and lemon juice sit for about 10 minutes.
  • Pour the heavy whipping cream in a stand mixer with the SweetLeaf® Liquid Stevia Vanilla Crème Sweet Drops™. Mix on high until stiff peaks form.Set aside about 2 cups of whipped cream for topping. Gently fold in the berries with the remaining whipped cream.
  • To assemble, place a small amount of plain whipped cream into the bottom of 6 serving glasses. Spoon the raspberry fool evenly into each glass. Top with more plain whipped cream and decorate with more berries if desired. Enjoy immediately or refrigerate until ready to serve.

Low Carb Dairy-Free Raspberry Truffles

If you had told me a year ago, I could make a creamy truffle without using cream cheese or any dairy for that matter, I would have called your bluff. I just didn't think it was possible or that a dairy free truffle could even compete with a traditional one.

Now don't get me wrong here, I'm a dairy lover all the way. I enjoy dairy products regularly, but I need to limit how much dairy I can have on a daily basis.  I also receive comments from many readers asking how to make some of my recipes dairy free. So today's recipe is for all of you who may have allergies to dairy, but even if you don't and may be skeptical, I dare you to try them and NOT be shocked at how creamy these are!

I made these for Mother's Day at my home this year and many of you know, none of my family is low carb or sugar free. My sister in law and her mother loved these truffles! They felt there was just enough sweetness and they loved the texture.

While my dad (Italian from Rome who loves his bread and pasta) enjoyed the flavor, he's not much of a dessert kind of man and said they were too big for him. So he cut one in half, ate half and said, "Wow these are really good, I'm going it eat the rest of it!" I knew if these could pass the picky dad test, we had a winner!

These truffles are a wonderful solution to those times when you need a dessert, have no idea what to make and have little time to make something. They come together so quickly in the food processor. The most time needed is really to let them get cold enough before coating with melted chocolate.

Brenda's Notes:

  • These truffles in the pictures are large and I made just 12. But the consensus of my family and friends said they were a bit too large. Use a small cookie scoop and this recipe will make 24 truffles.
  • You don't need the berry flavored stevia, you can use plain stevia or vanilla flavor, but it adds a bit more berry flavor than simply just using the extract.
  • I've given the nutrition info using 85% dark chocolate as it has lower carbs in it than using sugar free chocolate such as the brand Lily's Sweets. I don't feel there is a difference in taste in using either chocolate but if you want less carbs , the 85% is the way to go.

Ingredients

Instructions

  • Place raspberries, cashew butter, coconut oil, stevia, extract and salt into a food processor and process until smooth.
  • Use a cookie scooper to make 24 truffles, press in 1 raspberry into the center of each.
  • Place on a parchment lined baking sheet and freeze for 30 minutes.
  • Melt chocolate to coat truffles, by placing in a microwaveable bowl for 30- 60 seconds, stir until smooth.
  • Use a skewer to place one truffle at a time into melted chocolate.
  • Tap off excess chocolate and place back on baking sheet.
  • Drizzle with a little more chocolate if desired.
  • Keep refrigerated.

This recipe has been on my Foodie-To-Do List for a long time! Ever since I made this gluten free  4th of July Pizza a couple of years ago, I knew a Low Carb Keto Fruit Pizza with my coconut flour cookie recipe needed to happen.

Using my Low Carb Vanilla Wafers which tastes like a sugar cookie crust,  I knew this would be a big hit with everyone on a keto diet and low carb diet and even those who are not and I was right!

Perfect Low Carb Dessert

I've made this for Memorial Day as well as the Fourth of July and each time, it's been a winner with everyone. Many can't believe it's a keto cookie pizza recipe!

This healthy fruit pizza is really the most perfect summer dessert for all the summer parties because it uses very simple ingredients.

I covered our cooled crust with a cream cheese icing. Make sure to purchase sugar-free cream cheese, meaning no added sugar.

Healthy Ingredients

My Sugar Free Vanilla Wafers cookie recipe

Cream cheese- softened is best to incorporate easier

Heavy Cream or heavy whipping cream

Vanilla Extract

Vanilla Liquid Stevia- you can really use favorite sweetener. Here's my Sweetener Guide & Conversion chart to help you decide how much of other low-carb sweeteners to use. 

Fresh Blueberries- you can also swap these for fresh blackberries

Fresh Raspberries or use fresh strawberries

How to Make Keto Fruit Dessert Pizza

Preheat oven to 350 degrees F.

Prepare my vanilla wafer cookie recipe and rather than turn into a roll for slicing cookies, spread onto a baking pan lined with parchment paper.

My rectangle shape measured 8 by 12. Bake for 12-14 minutes or until golden brown. Allow to cool completely.

Place the cream cheese, heavy cream, vanilla extract and stevia in a stand mixer or large bowl using an electric hand mixer and blend on high until the consistency is that of frosting.

Spread evenly over cooled cookie crust. Arrange blueberries in the left corner.

I made 5 rows across, with 8 berries in each row. Arrange 5 rows of raspberries across cookie. Slice and serve or keep refrigerated until ready to serve.

I used the recent invite for my daughter to head to a friends pool party, to make this low carb cookie dessert pizza to share with others.

"Others" meaning friends who do not typically eat sugar-free and are not on a ketogenic diet.

I always like to do that. I like to hear what they thought of something they don't normally eat.

I heard rave reviews! My friend told me her hubby loved it so much he wanted to write me a thank you note!

Brenda's Notes:

The vanilla wafer recipes calls for the cookies to be made into a roll shape and refrigerated in order to slice them before baking. In this recipe that step is eliminated. Just prepare the sugar cookie dough and spread it onto the pan and bake.

You can use any sweetener of choice that equals about ½ cup of sugar, Lakanto Monk Fruit is a great option. Taste and adjust to your preference.

Strawberries sliced in half is also another option if you don't like raspberries.

Low Carb Fruit Dessert Pizza

You can really use whatever fresh fruit toppings you want on this dessert pizza. I chose low carb fruits like raspberry and blueberries, but any fresh berries will be good.

Trying to keep to the Red, White and Blue themed for 4th of July is always a festive dessert to bring to a party or summer cookouts.

Sugar-Free Cream Cheese Frosting

You can choose one of two frosting options I have. I used my Sugar Free Cream Cheese Frosting in this recipe and added those ingredients below but feel free to use this Sugar Free Buttercream Frosting, really either would hold up well.

One note though is the cream cheese frosting will need to stay refrigerated before serving, especially in the heat of summer.

Bake crust, cool, make the frosting, add your favorite berries to decorate and you're done. I also opted to pre-slice pieces to make it easier for the kids to grab.
